Broccoli and Goats Cheese Fritters

These fritters have goat’s cheese, red onion AND broccoli – what’s not to love?! Am I overselling these a little? Maybe, but probably not.

They take about 30 mins to  make, including prep time and this serving is for four people. I recently made these for my mum and I for our lunch, which I served with lemon, a simple salad and large amounts of white wine (to be consumed a separate entity from the fritters and not recommended as a dressing). What was left over went into the fridge and was reheated for lunch the next day.



Ingredients
1/2 Cup of plain flour
1/2 Red onion, chopped
Broccoli bundle, finely chopped with stalks removed
50g Goat’s cheese
1 Garlic clove, crushed
2 Tablespoons of olive oil
1 Egg
Salt and pepper to taste – which, by the way, I have always thought as a strange way to say ‘make it as salty or peppery as you like’ because to me it reads as ‘salt and pepper to snack on while you’re cooking)

Method
Steam the chopped broccoli until soft and crush with a fork, mix in the goats cheese and put to one side.
In another bowl, whisk the egg and then add the broccoli, red onion, cheese and flour.
Heat the olive oil in a hot pan and then cook the fritters for about 3 mins on either side, or until golden on top.
Serve up and enjoy!
