A comfort food I used to turn to all the time was crispy, greasy, deep fried chicken. I didn’t want changing my diet to mean that I couldn’t enjoy an alternative to one of my favourite comfort foods.
Ingredients (serves 2)
2 Chicken breasts, cut into strips/pieces depending on preference
2 End slices of wholemeal bread, the harder the bread the better so this is a great way to get rid of those poor old end slices no one wants
1 tsp Pepper
1 tsp Garlic salt or just 1 small clove of garlic finely chopped if you don’t have garlic salt
1 tsp Paprika
2 tbsp sunflower or rapeseed oil
In one bowl, crack and beat the eggs, keep to one side
In a shallow bowl, finely grate the breadcrumbs and mix in the spices
Cover the chicken pieces in the egg and then roll around in the breadcrumbs until fully covered
Put the chicken in a heated pan and cook in the oil on medium heat. The trick is not to flip the chicken until you can see the sides of the chicken starting to brown, this will ensure that the chicken is nice and crispy.
Salt to taste and enjoy!
