Grilled Halloumi Cheese and Peppers on Sourdough

I LOVE having this for lunch, the saltiness of the cheese mixed with the sweetness of the basil and grilled red bell pepper is what dreams are made of, well, my dreams for the most part anyway. It takes less than 10 mins to throw together and leaves you feeling nice and full.Grilled Halloumi Cheese and Peppers on Sourdough  mazzoni says healthy lunches light lunches

Sourdough bread
4 slices of halloumi cheese
small handful of spinach
small handful of baby tomatoes
1/2 red bell pepper, cut into strips
1 sprig of basil
balsamic vinegar
1/2 lime
1 tablespoon of olive oil

Start by putting the slice of sourdough bread into the toaster.
Pour the oil into pan or griddle pan on medium heat and add the halloumi cheese, leaving for about 2 mins before flipping. About a minute after you have flipped the halloumi, add the peppers into the pan. Leave for a further minute or so and then remove.
By this time your toast should have popped, squeeze a tiny bit of lime over the toast. Next, add the spinach followed by the basil, cheese peppers and chopped tomato. Finish it off with a sprinkling of balsamic vinegar and enjoy!
