The holidays doesn’t have to mean super over indulgence and in the pursuit of being healthy, it also doesn’t have to be a plate of cinnamon scented air either. I aim for my cooking to land somewhere in the middle during the holidays. This roasted golden beetroot carrot side dish works really well along side other traditional sides such as mashed potato, corn on the cob or sprouts. Outside of the holidays, this dish makes for a lovely warm salad over spiced couscous.
I can imagine you now peering at the screen, calling over friends and family to confirm if you are in fact looking at carrots and not parsnips and I can confirm that they are, indeed, carrots! Bearfaced Groceries sent me some produce as a part of an ongoing collaboration to create delicious recipes for you all and they sent not only orange carrots, but white and purple ones too! Not only that but they were also all twisted into weird and wonderful shapes, I was in carrot heaven with those little weirdos while I came up with this roasted golden beetroot carrot side dish.
Roasted Golden Beetroot Carrot Side Dish Ingredients – Serves 4
3 Golden Beetroot
1 Red Onion
1 Tablespoon of Olive Oil
Roasted Golden Beetroot Carrot Side Dish – Method
Preheat the oven to 200 degrees Celsius.
Peel the beets and cut them into half moon shapes.
Slice the carrots into batons and thinly slice the onion.
Put all the chopped vegetables into a bowl and toss in olive oil.
Transfer onto a lined baking tray and sprinkle with a pinch of salt. Roast for about 25 mins.
Enjoy with sauce of your choosing, I recommend having with my Apple Cider Dressing which can be found here.
