Chocolate and peanuts, truly a match made in heaven. Just like walks through the park on a crisp autumn day Sunday mornings (what I did today) and lazing around in bed all day on a Sunday (just kidding about that whole walking thing, this is actually what I did today). Before I gave up refined sugar, one of my all-time favourite snacks were peanut butter chocolate cups. Now, giving up sugar certainly didn’t mean I was about to live my life without peanut butter and chocolate ever again, hence the refined sugar free chocolate covered peanut butter balls recipe was created.
The filling is made of only 4 simple ingredients, peanuts, dates, oil and a little salt. This recipe is vegan, raw, gluten free and of course, refined sugar free.
Refined Sugar Free Chocolate Covered Peanut Butter Balls Ingredients
150 grams of peanuts
150 grams of dried, pitted dates
1 teaspoon of oil
½ teaspoon of salt
50 grams of coconut oil
100 grams of cacao or cocoa powder
3 tablespoons of agave syrup
Preheat the oven to 180 degrees Celsius.
Line a baking tray with parchment paper and roast the peanuts for about 7 mins.
To make the filling, start by finely chopping the dates into a paste like consistency.
Once the peanuts are roasted and the dates are chopped, put them in a blender with the oil and salt and blend.
Roll the peanut and date mixture into small balls.
To make the chocolate coating, melt the coconut oil in the microwave or on a stove top until clear.
Once melted, mix the coconut oil with the cacao/cocoa and agave syrup in a medium sized mixing bowl.
Roll the balls in the chocolate, you can either do this by hand or by putting a skewer or fork through the balls and rolling in chocolate. Place the balls on a tray and put in the fridge to set, this will take about 15 mins.
Keep in an air-tight contained in the fridge and enjoy for up to 1 week.
