Soup is a fantastic way to get a lot of nutritious food into one meal and to use up produce taking up space in the fridge. Best of all, it is so easy to put together and you can reheat it and enjoy it all week.

I have recently been working with Bearfaced Groceries who source seasonal produce from local farmers and deliver it straight to your door (kind of like Santa for foodies). They kindly provided me with the turkey crown I used to create this recipe.

Healthy Parsnip Soup Recipe Ingredients

4 parsnips
3 medium potatoes
1 large onion
3 stalks of celery
4 stalks of parsley
2 cloves of garlic
1 tablespoon of olive oil
1 litre of water


Chop the onions, celery and garlic.
In a pot, heat the oil and then add the onions, celery and garlic., let it simmer on medium heat for 5 minutes.
Meanwhile, chop the parsnips and potatoes into cubes, about 1 inch in size.
Add the water to the pot along with the potatoes and parsnip.
Reduce the heat to low, cover and leave for 30 mins.
Lastly, finely chop the parsley and blend together using an electric masher or blender.
Season with salt and pepper to taste and enjoy!
